台灣茶葉的發展歷程已經超過百年之譜,過去也曾經有過非常輝煌的外銷紀錄,由於經過幾個政權的更替,以及二次世界大戰的背景因素,這個台灣重要的產業也曾經在世界的版圖上消退,從民國57年前省政府農林廳改組「台灣省茶業改良場」,積極輔導茶農精進茶產業,並於民國65年開始在鹿谷鄉農會舉辦凍頂烏龍茶的比賽開始,終於將台灣茶文化帶到美麗的境界,時至今日,台灣在茶產業以及茶文化的推廣上,已經是大鳴大放,更在國際上擁有重要的地位,不但在種植與製茶技術上獨步全球,茶的品飲與美學更是箇中翹楚,茶飲相關行業的年產值更是高達1500億新台幣,我們身為這個寶島土地上的一員,實在不可不認識台灣茶並為這個成就感到驕傲阿!

After the retreat, the Government reorganized the “Taiwan Province Tea Industry Improvement Center” in 1968, actively counseling tea farmers to Improve the tea production technology, and began to hold the competition of oolong tea at the Lugu Farmers Association in 1976. Taiwanese tea culture has brought to a beautiful world. Until now, Taiwan has become a big fan of the tea industry and the promotion of tea culture. It has an important position in the international tea world, not only in the cultivation and tea making technology, but also in the global market. The taste and aesthetics of tea is even the best all over the world. The annual output value of tea related industries is as high as NT$150 billion. As a member of this treasure island, we really must know Taiwanese tea and be proud of this achievement!
適合栽種茶葉的氣候
台灣的地理、氣候及環境非常適合茶樹生長,使台灣成為唯一兼具不發酵茶、部份發酵茶及全發酵茶的產茶地區;由於各茶區土質、氣候、海拔及製造方法不同,所產製的茶葉品質、香氣、滋味、喉韻各有不同,形成台灣各茶區風味不同的特色茶,是世界有名的茶葉產區。

台灣茶品種
台灣可產製綠茶、包種茶、烏龍茶及紅茶等,但近年來以產製包種茶及烏龍茶為主,紅茶和綠茶為輔,茶葉品質普受國內外好評,是國人出國手提及來臺觀光客最喜愛的特產禮品,聞名全球,優思集團的廖國智教授長年深耕餐飲與台灣無毒精品茶,對於推廣餐飲與茶的結合不遺餘力。

台灣茶業產製技術雖源自大陸福建,但近年來在本場等相關單位不斷研究改良後,已獨樹一格,在部份發酵茶的專業產製技術領域已享譽國際,各地區產製的特色茶除了具有特殊的花香之外,滋味甘醇更是深獲消費大眾的好評,其保健功效亦受到各界青睞,無形中也帶動烏龍茶產業新的發展。

➤不發酵茶:綠茶、龍井、碧螺春
➤半發酵茶:包種茶、東方美人茶、所有烏龍茶
➤全發酵茶:紅茶
➤後發酵茶:生普洱茶
Classification of tea:
➤Non-fermented tea: green tea, Longjing, Biluochun
➤Semi-fermented tea: Bāo zhǒng tea, oriental beauty tea, all oolong tea
➤Fully fermented tea: black tea
➤Post-fermented tea: raw Pu’er te
